Avocado toast is a delicious and healthy breakfast, but if you’re like me, you have trouble getting it ready for the work week. I work a lot of early mornings, so I don’t have time to make myself breakfast—I need something that’s ready to go, and takes less than two minutes!
So here’s my recipe: every Sunday morning, I take three avocados and slice them open. Then I scoop out the insides and mash them in a bowl. Next I add about a half-cup of olive oil, a tablespoon of sea salt, half a teaspoon of ground cayenne pepper, and a tablespoon of Sriracha hot sauce.
Once that’s all mixed together really well (I use my hand blender), then I pour the whole thing into an ice cube tray and freeze it overnight. The next morning all I need to do is pop out two or three cubes and put them on my toast with some cheese or bacon bits on top. Yum!
1. Get your tools ready: a knife and a spoon, a cutting board, and a toaster.
2. Cut the avocado in half, lengthwise. Twist the halves in opposite directions to separate them. Remove the pit.
3. Scoop out the flesh from each half with a spoon. Slice this avocado into thin strips or spread it evenly over each slice of toast.
